May is National Strawberry Month

I just love strawberries. They are my favorite fruit to snack on anytime of the day. I can’t believe that May is almost over and I did not know it was National Strawberry Month. So I thought I would share a few facts about strawberries:

  • has 200 seeds
  • only fruit with seeds on the outside
  • are a great source of folic acid, potassium and fiber
  • are part of the rose family
  • are fat free
  • 80% of the country’s strawberries are grown in California
  • 8 strawberries contain more vitamin C than an orange

It just so happens that at the beginning of the month I came across a recipe for Fresh Strawberry Pie over at Southern Plate. Every time I visit her site I get all pumped up about cooking. She makes it so easy. I did not make a homemade crust like she did. I am not that good yet! I used a frozen pie crust that I had left over from when I made sweet potato pie. I just baked it before filling it with strawberries.

Christy’s recipe is really simple. I caught the strawberries on sale and the gelatin was inexpensive. I didn’t even use the whole box. I did have to buy some cornstarch though. It tasted really good. My kids love it.

While looking for recipes of stuff I can make with strawberries I came across this site called Strawberry Recipes. It is full of recipes for cakes, smoothies, pancakes and muffins. There was even a recipe for Strawberry Salsa. Don’t think I want to try that one! I do want to try the Strawberry bread. That one might be yummy.
