We Tried The New Betty Crocker Watermelon Cupcake Mix & Frosting #BiteIntoSummer

What is dessert without a good cake? I was recently sent Betty Crocker’s New Watermelon Cupcake Mix and Frosting to try.  Betty Crocker has partnered up with Target to offer this unique cake flavor.

When my kids saw the cupcakes on the box, the first thing out my son’s TJ mouth was “Cupcakes with Watermelon Seeds”? I had to take a minute to explain that no we would not be eating watermelon seeds. It just looks like seeds.

My two bakers, Nannah and Kayla, were eager to make this new Watermelon cake. They decided to make cake instead of cupcakes because they just like to be different.

Once the cake came out of the oven and cooled, I was the first to give it a taste.

I was expecting something along a Watermelon candy flavor. I was wrong. It was sweet, light and tasted like watermelon. It was not overwhelming and even smelled like watermelon.  I am not sure if it is because of this Winter being so long but it made me think of warmer weather.

On a scale of 1-10 TJ gave it a 8!! Even my husband liked it and he is very picky when it comes to different types of cake. Nannah gave it a 2 because she does not like Watermelon that much.

This watermelon cake mix and frosting is a seasonal item so it can be difficult to find in stores. I found a recipe on Baking Beauty for Watermelon Cupcakes that is worth a try.

    This looks delicious. the girls are making this watermelon cake mix with me this weekend. And if hubby liked it, it must be good. ( I use the same testing method at home.)

      They may really like it. It is a nice flavor change from the normal chocolate or vanilla cake. Let me know what you think once you try it!

    These are absolutely DELICIOUS! Best if made about 3 mins undercooked and I like using cream cheese frosting. I was dismayed to find that Target didn’t have anymore at any stores toward the end of this summer or through their website (not sure if their exclusivity was just a test market in CT?) but I am excited to find distributors through and am ordering backups just in case!!!
    These are my favorite cupcakes I have ever tasted – not candy like at all and I am not exaggerating that these are really something special! Everyone who tried mine absolutely loved them!

    You can only get the New Betty Crocker Watermelon Cupcake Mix and Frosting at your local Target……This is not true. How I found out about the watermelon cupcakes is in the Walmart add. So you do not have to go to Target to buy these.
